


Produced by High Weald Dairy. Ricotta, meaning re-cooked cheese, is a fresh, low-fat, soft cheese, made by heating the organic whey left over from making a hard cheese to 90°C. This results in the cheese floating to the surface where High Weald collect it. This Ricotta is pasteurised and made from sheeps milk and has a slightly granular texture with a mild flavour and works well in both sweet and savoury dishes, from cheesecakes to baked pasta.
